Formulation and Stability of Cellulose-Based Delivery Systems of Raspberry Phenolics

Encapsulation of bioactives is a tool to prepare their suitable delivery systems and ensure stability. For this purpose, cellulose was selected as carrier raspberry juice phenolics freeze-dried cellulose/raspberry encapsulates (C/R_Es) were formulated. Influence amount (2.5%, 5%, 7.5% 10%) time (15 or 60 min) on the complexation investigated. Obtained C/R_Es evaluated for total phenolics, anthocyanins, antioxidant activity, inhibition α-amylase color. Additionally, encapsulation confirmed by FTIR. Stability examined after 12 months storage at room temperature. Increasing during formulation C/R_E from 2.5% 10%, resulted in decrease content anthocyanins. formulated 15 min had higher investigated compounds. This tendency retained storage. The highest activities determined with lowest those 10% cellulose, regardless methods used its evaluation. After months, activity slightly increased. Encapsulates capability α-amylase. also an impact color C/R_Es. Results study suggest that could be good polymer delivering bioactives, especially when lower percentages encapsulates.
